I am constantly trying to find ways to sneak veggies into my toddler’s meals. These broccoli croquettes are a perfect way to do that. Yummy croquettes filled with cheesy goodness will be sure to make this a go-to staple in your home.

Equipment

  • Air Fryer
  • Food Processor

Ingredients
  

  • 8 ounces frozen broccoli florets
  • 2 large eggs
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cloves fresh garlic
  • 1/2 cup almond flour
  • 1/3 cup parmesan cheese

Instructions
 

  • Add defrosted broccoli and all rest of the ingredients into food processor. Pulse until mixed.
  • Make the batter into croquette shape or patties and place on lightly oiled air fryer rack.
  • Cook in air fryer for 4 minutes, Flip and cook for another 2 minutes. 400F/204.4C

Keep In Mind: You might have to place the chickpeas in the air fryer for a couple more minutes until you have your desired texture. My air fryer cooks very fast so 6 minutes was perfect!
